Honey remains immutable in its chemical characteristics for at least one year. For the preservation of honey it is recommended to place in a dry, cool place and to use it "raw", because, when heated cooked it loses a large part of its properties. Honey is the end product of the work of a myriad of domestic bees, and they produce it using the nectar of flowers: they gather, transform, and combine it with the proper specific substances and is allowed to mature in the combs of the beehive. The substances from which the bees produce the honey are essentially the nectar and the honeydew; nectar is a sugary liquid derived from the sap of plants and the honeydew, which is what some insects expel from their own nourishment, constituted by sap. Honey has an elevated digestibility: it is composed in fact from simple sugars (up to 90% glucose and fructose) and does not need elaboration by our organism; providing therefore an almost immediate surge of energy. Since an infant's digestive juices are non-acidic, ingestion of honey creates an ideal medium for botulinum spores to grow and produce sufficient levels of toxins to cause infant botulism. For this reason, it is advised that neither honey, nor any other sweetener, be given to children under the age of 18 months.
