CHARACTERISTICS: Rich in enzymes and mineral salts.

COLOR: Varies depending of the percentage of the types of flowers present, generally dark amber.

FLAVOR: Varies depending of the percentage of the types of flowers present. Usually has a hearty flavor and can be used as a baking and cooking honey as well as a table honey with a more robust taste.

THERAPEUTIC PROPERTIES: Said to have a disintoxicant effect of the liver and kidneys.

Since an infant's digestive juices are non-acidic, ingestion of honey creates an ideal medium for botulinum spores to grow and produce sufficient levels of toxins to cause infant botulism. For this reason, it is advised that neither honey, nor any other sweetener, be given to children under the age of 18 months.
