This is a dressing that has bee aged for 6 years in oak barrels
and for 6 months in steel casks.
It is an organically prepared product from the new wine/must,
from typical grapes derived from the geographical area of Modena (50% Lambrusco
Grasparossa and 50% Trebbiano Modenese grapes), picked in September/October and
worked with the system of “slow and soft pressing”. It is then
cooked on direct flames in an open pot, until it becomes a brownish color,
limpid and visibly creamy, with an bounteous and intense perfume, which
transforms itself into a sharp flavor, with a touch of field flowers and
cooked mustard.
