Traditional Balsamic Vinegar has been used for
centuries. Already known in Ancient Rome by great Poets like Virgilio, other
than having a wonderful flavor it was also often used as a remedy for
various illnesses. Balsamic Vinegar is obtained from specialized grapes in vineyards in the province of Modena, above all
from Lambrusco and Trebbiano. The procedure is completely natural and generates
a miraculous product. The new wine obtained from the pressing of the grapes,
is then boiled in an open pot, this is followed by the operation of
“rincalzo” or ageing. Which takes place decanting the liquid in a number of
successively smaller barrels and different type of wood. At this point it is
left to age for different periods, which permits
the differentiation of the product: more than 12 years for the “Classico”,
more than 15 years for the “Extra Vecchio”; in each case the result is
unique and impossible to imitate, the taste is absolutely delicious.
