The "Mostarda" is a typical
product that is tied to farming traditions from Mantova. This tradition was
started in order to preserve fruit in the winter months. The farmer would
then serve it on special occasions with simmered meats, stews or roasts. A
delicate sweet and sour is achieved as the candied fruit is thinly sliced
and put into a thick sweet syrup, then aromatized with essence of mustard.
Great on aged cheeses
such as Tuscan pecorino, Manchego, and wonderful on roasts or boiled meats. |
