It is really difficult to imagine how many different types of hams and cold cuts could have been born. Certainly their history, divisions, and cultural differences have held a great weight, but it is unbelievable to think that however how many, often with unique characteristics, they have been able to create and produce. Unfortunately the tendency is to standardize most on the usual "more or less" ten products that represent, also economically, a big part of the sector. This tendency brings to a leveling of the quality and the micro-differences, besides the risk of disappearance of many great products not so economically interesting. The knowledge and the consumption of these "less known" meats and cold cuts, allows to you to experience new tastes and new traditions.
