  SALAME PIACENTINO D.O.P. - WHOLE 

The production of Piacentino Salami takes place exclusively in the province of Piacenza; the pigs used are bred in Lombardy and Emilia Romagna and are the same as those selected for the production of Prosciutto di Parma (Parma ham). The salami is made by blending the lean and fat parts of the animal. The procedure starts with breaking both the lean and fat parts into bits, passing them through a meat grinder with holes that are superior to 10 mm. After having added a tasty mix of salt and aromas to the salami mixture, it is put into pigs skins; the product is then tied, with string as tradition dictates and then left to dry in places with a controlled temperature and humidity. Then the final phase of ageing/maturing, where it is left for no less than 2 months. When the Salami is cut, it is bright red with spots of fat of a perfect white.

THE HISTORY

The origin of Salami Piacentino, together with Coppa and Pancetta Piacentina, are without doubt connected to the climatic conditions of the Piacenza area; which is humid and without rapid temperature changes, in fact the climate in this area has over the centuries favored the development of a strong economy based on the breeding of a prized variety of pigs. Historical testimony confirms that already in the XV century the fame of Salame Piacentino had gone beyond the confines of the famous Ducato di Piacenza and had even found great appreciation in France and Spain. The illustrious Cardinal Giulio Alberoni was a great supporter of the above mentioned products and thanks to his prestigious position in the court of Filippo V of Spain, stimulated the spread of these prestigious D.O.P. (Denomination of protected origin) salumi/cold meats especially in elite circles.
