The Cabernet Sauvignon Corbeau
2001 confirms its high level of quality: it is violet and profound, with
marked sweet and fruity fragrances with notes of resin and spices. To the
taste, which appears immediately solid and long, it is ample and is already
harmonic, even though there is a slight final hardness and acidity.
Vinification: It ferments
for 20 days on the skins with selected yeasts to exalt the fruity fragrance
and its natural and gentile tannin. The skins are subjected to a soft
pressing before the refinement of the wine in new barrels.
